How to Get Perfectly Domed Muffins
You follow the recipe to the letter, measure the flour, don't overmix, set the timer. And still they come out flat: pale discs that spread to the edge of the cup instead of rising into the tall, cracked crown you were after. A proper dome has almost nothing to do with the recipe. It comes down to a handful of things in the first few minutes of the bake, and once you know them, the bakery top stops being luck.
Why muffins come out flat
A dome is a burst of rise that happens before the top of the muffin sets. Heat hits the batter, the raising agent releases gas fast, and the batter climbs the walls of the cup and keeps going above the rim before the crust firms up and locks the shape in place. A big early burst gives you a tall crown. A slow, gentle rise sets the top while the batter is still level, which is a flat muffin every time.
Most of the fix is about encouraging that early burst and giving the batter somewhere to climb. Five things do the work.
Keep the batter thick
Thin batter spreads before it can rise. If the mixture pours off the spoon in a smooth ribbon, it will run to the edges and bake flat. You want a batter you have to scoop, one that holds a soft peak when you drop it back into the bowl. The usual culprit for a runny mix is overmixing, which slackens the batter. Fold until the flour just disappears and stop, even if a few lumps remain. If it still looks loose, a spoonful more flour thickens it without hurting the crumb.
Rest the batter before it goes in
This is the step almost everyone skips. Leave the filled tin to stand for fifteen to twenty minutes before it goes near the oven, or chill the batter in the fridge for half an hour. The rest lets the flour absorb the liquid and thickens the mixture further, and cold batter meeting a hot oven gives a sharper temperature shock and a stronger early rise. I baked the same recipe rested and straight in, side by side, and the rested batch stood a clear centimetre taller.
Fill the cups higher than feels sensible
Recipes tell you to fill two-thirds full because that gives a clean release. For a dome, that is too cautious. Fill to about three-quarters, up near the rim, so the batter has the mass to push up and over. The trade-off is honest: fill too high and the tops spread across the flat of the tin and tear when you lift them out. The way round it is cup depth. A deep cup gives the batter walls to climb before it crowns, so you get height without the spillover. Shallow cups never dome however carefully you fill them, because the muffin has nowhere to go but sideways. Start hot, then drop the heat
This is the single biggest lever. Preheat fully to around 220°C, get the muffins in, and hold that heat for the first seven or eight minutes. The blast sets off a rapid rise and firms the outer crust while the middle is still climbing, which is what forms the crown. Then drop to about 180°C to bake through without burning the tops. And resist opening the door in those first minutes. The rush of cold air stalls the rise at the worst possible moment.
The "fill every other cup" trick
You will see this one everywhere: fill alternate cups and leave the rest empty so the muffins have room to spread and dome. It does work, in that the tops get more air around them. But it halves your batch, six muffins from a twelve-cup tin, which is a poor trade for most people. It is really a workaround for a shallow, cramped tin. With cups that are deep enough and spaced properly, you can fill every one and still get a good crown. Reach for the alternate-cup trick if your tin forces you to, not as a rule. The same deep cups are the reason a jumbo tin turns out proper bakery-style cinnamon rolls, not just tall muffins.

Common questions
Why are my muffins flat even though I follow the recipe?
Flat tops are usually a temperature and timing problem, not a recipe one. Either the oven was not hot enough at the start to force a fast rise, the batter was too thin and spread before it could climb, or the cups were too shallow. Start with a thick, rested batter, an oven fully preheated to about 220°C, and cups deep enough to fill near the top. That combination fixes most flat muffins on the next bake.
Should I fill the cups all the way to the top for a dome?
Close to it, but not quite. About three-quarters full is the sweet spot. That gives the batter enough mass to rise above the rim and crown, without so much that the tops spread across the flat of the tin and tear when you lift them out. If muffins weld themselves to the surface between cups, ease back slightly and check your cups are deep enough.
My muffins rise beautifully then sink as they cool. What went wrong?
That is over-leavening or underbaking. Too much baking powder gives a dramatic rise with no structure to hold it, so it collapses as it cools. Measure the raising agent carefully and check it is still fresh, as old baking powder loses its lift. The other cause is pulling them out too soon: a muffin that is not set in the middle will sink. Test with a skewer and give them the full time.
Why do my muffins peak into a cracked volcano instead of a smooth dome?
A sharp, cracked peak usually means the oven was too hot for too long, or too much raising agent drove the rise faster than the crust could keep up. A little cracking is normal and many bakers like it. If it is tipping into a tall volcano with a hollow underneath, drop your starting temperature slightly, or use the two-stage method of a hot start and a lower finish so the rise is quick but not violent.
Do I need a special tin to get domed muffins?
Not special, but the tin matters more than people think. You need deep, well-spaced cups so the batter can climb, and heavy-gauge metal that stays flat and heats evenly rather than a thin one that buckles. A dark, coated carbon steel tin browns the crust nicely too. And a standard recipe works straight across the sizes, so you can use the same batter in a mini tin without any conversion.
The short version
Thick batter, rested, into deep cups filled near the top, then a hot start dropped to a gentler finish. That is the whole method, and the tin does more of it than the recipe does.
