How to Stop Bread Sticking to the Tin

You tip the tin, give it a confident shake, and the loaf moves about a centimetre. Then it stops. You shake harder, the top half comes away in your hand, and the base stays behind, welded in place like it has signed a lease. Every baker has done the surgery that follows: knife round the edge, crumbs everywhere, a loaf that looks like it lost an argument.

The good news is that bread sticking is nearly always caused by a short list of things, and every one of them is fixable. Here is what actually goes wrong, and what to do about it.

Why bread sticks in the first place

The coating has given up. Cheap tins carry a thin non-stick layer bonded to thin aluminium. The metal flexes with heat, the coating cracks, and once it is scratched or worn it grips dough instead of releasing it. If your tin is more than a couple of years old and sticking is getting steadily worse, this is the likely culprit. The dough was sweet or enriched. Sugar caramelises against hot metal. That is why a plain white loaf slips out obligingly while banana bread has to be chiselled. Fruit loaves, brioche, malt loaf and anything with honey or syrup in the dough are the worst offenders, and they need different handling (more below).

The base was underbaked. A loaf that is not quite done has a soft, slightly tacky base, and tacky dough sticks. If the stuck patch is pale and doughy rather than golden, the loaf needed longer, not more grease.

You turned it out at the wrong moment. Straight from the oven, the crust is still soft and steamy and tears easily. Left in the tin for an hour, the trapped steam softens the crust back down and can glue it in place. There is a window, and it is about ten minutes wide.

Spray oil has built up a film. Aerosol baking sprays contain lecithin, which bakes onto the surface over time as a sticky, gummy varnish. It looks like the coating has failed. It is actually a residue problem, and it makes sticking worse with every bake.

How to get a clean release every time

Getting bread out of the tin cleanly

  1. Grease properly: Use butter or a wipe of plain oil on kitchen paper, never aerosol spray. A thin, even film is all you need.
  2. Line for sweet doughs: For sweet or enriched doughs, line the tin with a parchment sling: one strip along the length with overhang on both sides. Plain bread doughs do not need it.
  3. Bake it fully: Tip the loaf out carefully with a cloth and tap the base. It should sound hollow. If it sounds dull, give it five more minutes.
  4. Wait ten minutes: Once out of the oven, leave the loaf in the tin for ten minutes. No less, no more.
  5. Cool on a rack: Turn the loaf out onto a wire rack to finish cooling out of the tin, so steam escapes instead of softening the crust.

Already stuck? How to rescue the loaf

Do not saw at it with a bread knife. That is how tins get the scratches that make the next loaf stick worse.

First, wait. Ten minutes of cooling firms the crust and lets it contract away from the metal, and many "stuck" loaves free themselves. If it still will not budge, run a plastic spatula or a silicone palette knife around the sides, then tip the tin and shake once, firmly. Still stuck? Set the base of the tin on a cold, damp tea towel for a few minutes. The temperature change encourages the loaf to let go. A pale, doughy base that refuses to release is telling you something different: put the loaf back in the oven, in the tin, for five to eight minutes.

When it is the tin, not you

I tested a reader's tin once that had been "non-stick" for about four months of its life. The coating had worn through on the base, and no amount of butter was bringing it back. Technique cannot rescue a tin whose coating has failed, and with cheap tins that failure is built in: thin metal flexes, flexing cracks the coating, and the cracks spread.

Frequently asked questions

My tin says non-stick, so why is my bread sticking?

"Non-stick" describes the coating on day one, not year three. Thin tins flex in the oven, the coating cracks, and worn coating grips rather than releases. Scratches from knives and metal utensils do the same damage faster. If a light grease no longer helps, the coating has likely failed and the tin is due for replacement.

Should I grease a non-stick loaf tin?

For plain bread doughs in a good tin, you should not need to. A quality coating releases an unsweetened loaf on its own. A thin wipe of butter or oil does no harm and adds insurance, especially in a tin that has seen a few years of service. What you should never use is aerosol spray, which builds up a gummy film that ruins the surface. Why does banana bread stick so much worse than ordinary bread?

Sugar. Banana bread, fruit loaves and other sweet batters caramelise where they touch hot metal, and caramel sets like glue as it cools. Sweet bakes are the one case where lining with a parchment sling is always worth it, however good the tin. Our banana bread recipe uses exactly this method.

How long should bread sit in the tin before turning out?

Ten minutes. Sooner, and the soft crust tears when you handle it. Much longer, and trapped steam softens the sides and base, which makes sticking more likely and leaves the crust flabby. Ten minutes in the tin, then onto a wire rack to finish cooling.

Can a stuck loaf be saved?

Usually. Wait the full ten minutes, loosen the sides with a plastic spatula, and try a cold, damp tea towel under the base. If the base is pale and doughy, return the loaf to the oven in its tin for five to eight minutes, because an underbaked base is the real problem. Whatever you do, keep knives away from the coating.
