Yorkshire Pudding Batter Ratios: The Definitive Guide
Ask five kitchens for the Yorkshire pudding ratio and you'll get five different answers, all delivered with total confidence. Equal parts egg, flour and milk. Weigh the eggs, match the flour, add half again in milk. A mug of each. My gran's cup that no longer exists. I tested the main versions side by side in the same tins, the same oven, the same afternoon, because I wanted to know which one was actually right and which one just sounded right.
The short version: they mostly work. The differences are smaller than the arguments about them suggest, but they're not nothing, and knowing what each ratio does to the batter means you can stop guessing and start adjusting on purpose.
The three ratios, tested
1:1:1 by volume. A cup of egg, a cup of milk, a cup of flour. This is the one most people mean when they say "equal parts", and it's the easiest to remember because you never touch a scale. The catch is that a "cup of egg" is a strange unit — you're cracking eggs until the volume looks right, which is imprecise in a way the tidy ratio doesn't admit to.
1:1:1 by weight. Weigh the eggs (shells off), then match that weight in both flour and milk. Because egg is denser than flour and lighter than milk, this produces a noticeably different batter to the volume version — more egg, proportionally, than the cup method gives you.
The traditional Yorkshire rule. Weigh the eggs in their shells, use the same weight of flour, and the same volume of milk. It's the oldest of the three and the fussiest to explain, which is probably why it's the one that's dying out.
Batter made with more egg relative to flour puffs taller and holds its shape better out of the oven, with a more custardy interior. Batter with more milk relative to egg spreads a little flatter but crisps up drier and lighter. Neither is wrong. They're just different puddings wearing the same name.
What actually moves the needle
Ratio matters less than three things that get far less attention.
Temperature shock. The rise comes from cold batter meeting fat hot enough to be faintly smoking. This is doing more work than your choice of ratio. Batter straight from the fridge into a tin that's been in a 220°C oven for ten minutes will outperform room-temperature batter in a merely hot tin, regardless of whose ratio you used.
Resting time. An hour in the fridge lets the flour fully hydrate and the gluten relax, and it shows: rested batter rises taller and browns more evenly than batter used straight after mixing. Overnight is better again if you can manage it, though you'll need to loosen the batter with a splash more milk before it goes in, since it thickens as it sits.
Fat quantity. Skimping on the fat in the tin is the single most common reason a technically correct batter still comes out pale and low. You want enough that it's visibly pooling and rippling when you check the oven, not a wipe of oil that's mostly soaked into the metal.
Get those three right and the ratio argument becomes much less consequential than the internet makes it sound.
A ratio you can actually use
- Weigh three eggs: whatever that comes to in grams, use the same weight of plain flour and the same weight of full-fat milk. This is the 1:1:1 by weight version, and it's the most forgiving starting point if you've never measured by weight before.
- Mix: whisk flour and a pinch of salt, then whisk in the eggs until smooth, then whisk in the milk gradually so it doesn't lump.
- Rest: chill the batter for at least an hour, ideally overnight, covered.
- Heat the tin: put a scant tablespoon of oil or beef dripping in each cup and heat the tin in a 220°C oven for 10 minutes, until the fat is faintly smoking.
- Pour and bake: give the rested batter a stir (loosen with a splash of milk if it's thickened) and pour it in quickly, cup by cup, closing the oven door between each if you can manage it. Bake 20–25 minutes without opening the door.
Why your batter looks different from the recipe photo
If your batter is thinner or thicker than a recipe's photo, the most likely cause isn't your measuring — it's that "medium egg" means something different depending on where the recipe was written, and flour absorbency varies between brands. Treat any written ratio as a starting point and correct with your eyes: batter should coat the back of a spoon and pour in a steady ribbon, closer to double cream than to milk. Too thick and it won't spread to fill the cup before it sets; too thin and it won't hold its structure as it puffs.
This is also where the tin itself starts to matter. A tin with an uneven base heats unevenly, so some cups get properly smoking fat and others don't — and no ratio adjustment fixes a cold corner. The mistakes that outrank the ratio
Cold fat. Even a great ratio won't rise in fat that's merely warm. It needs to be smoking.
Opening the door early. Cold air hitting a half-set pudding is what causes the classic collapse. Twenty minutes, door shut, no checking.
Batter that's sat out too long at room temperature. It starts losing structure. If you're not baking within half an hour of mixing, the fridge is the safer place for it.
Overfilling the cups. Batter needs room to puff before it hits the top of the cup, or it spreads sideways along the top of the tin instead of climbing.
